Description:	The focus of winemaking at Ste. Chapelle is to bring out the unique quality of each vintage in the final wine. During harvest, vineyards are picked on flavor development. After the fresh grapes are brought to the winery, the harvest crew hand-sorts the clusters before they are destemmed. This assures the winemaker only the best possible grapes are being crushed. Slow, cool fermentations for white wines, barrel fermentation for Chardonnay and maximum development of flavor in red wines is emphasized.
